Does anybody know why in the games Dracula is always 3 meters high? Is he supposed to be that tall by default or is just that he can change size and does so for his fights? What's with the modern 3D games like "Lament of Innocence"? Is he also that big there?

"Size doesn't matter" with the Count; he lays waste whether big or small, in bat form or not. I'm pretty sure it's all for visual effect; to make the villain more impressive visually.

I think its a historical thing. My friend was picked for a play to be Dracula because he was so tall.
